I am (mostly) a convert to the Paleo diet.
As such, I am always looking for recipes or ideas to present food in an interesting way, using Paleo friendly ingredients as much as possible.
I found a recipe for Crispy Lamb Cutlets in a Womens Institute Cookery book I was browsing yesterday. After playing with the list of ingredients, I came up with this Paleo version:
Serves 4
8 Lamb cutlets or 4 loin chops
seasoning you prefer (I use sea-salt, and occasionally fresh ground peppercorns)
flour for coating (I used almond flour)
50g/2oz of walnuts, finely chopped.
40g/1 1/2 oz of cornflakes (optional, not Paleo, but tasty…)
beaten egg
oil for shallow frying ( I used EVOO)
Method
Rub the meat with your seasoning, then lightly coat with flour. Mix the nuts and cornflakes (if used). I rolled mine under a rolling pin.
Dip the meat into the beaten egg and then coat it with the nut mixture. Press it on firmly.
Shallow fry for 5-8 minutes or until lamb is done to your taste.
I served mine with mashed sweet potato and cauliflower.
